Yup.. PHP was the culprit
Indeed, the light at the end of the tunnel was a train! I was hoping to not have to upgrade Zen Cart because of all the changes I had made to it but now I am restarting from scratch and trying to feed the old database to the new program. I am at least updated but what a mess.
